French Egg Boats

Good Morning! If you didn’t already know, breakfast is my FAVORITE meal. No matter what time I have to get up in the morning, I make sure that I have enough time to make myself something, bagel and egg sandwich, oatmeal, toast with fruit, on the go breakfast just does not work for me. But since it is Saturday, I am going to take some extra time to make something great that I can share with Jacki and Nate.
French Egg Boats
(Revised from Spoon Fork Bacon)
Ingredients:
- 2 french baguettes
- 7 eggs
- 1/2 cup milk
- 6 ounces pancetta, fine chopped and fried until crisp
- 4 ounces muenster cheese, grated
- salt and pepper to taste
Method:
Preheat oven to 350 degrees F. Cut a deep “V” through the tops of the baguettes, without cutting through the bottoms. Partially unstuff the baguettes and set aside.

Place the eggs and milk into a large bowl and lightly beat together. Whisk in the remaining ingredients and lightly season with salt and pepper. Divide and pour the mixture into each baguette and place onto a baking sheet.

Bake for 20-25 minutes or until golden brown, puffed and set in the center. Season with extra salt and pepper when you take them out.

Allow to cool for about 5 minutes, cut and serve. Happy Breakfast!
